Setting the end points of your stick channels in Betaflight is actually pretty important. Like lots of other flight controller software it relies on certain maximum and minimum control values - and mid points - for things to work properly. If they don't you can get weird effects even to the point that you can't achieve full throttle or arm your quad.
Betaflight expects:
Min control value: 1000
Max control value: 2000
Mid point value: 1500
It even says so right at the top of the receiver page in the Betaflight Configurator. But it's easy to miss that.
Now you can change Betaflight to use the actual endpoints your transmitter uses, but it's lots or works and pretty much a waste of time. It's way easier to configure Betaflight to accept the endpoint values your radio produces and tweak them with the subtrims to match what Betaflight requires.
But make sure you calibrate your sticks before adjusting your subtrims. Especially if it's a new radio or your changed the gimbals.
